Cook the onion for 8 minutes until soft.<\/li><li>Add the garlic, ginger, chilli, cumin, coriander and paprika. Stir for 1 minute.<\/li><li>Add the sweet potato, tomatoes, chickpeas and stock. Bring to a simmer.<\/li><li>Cover and cook for 25 minutes, until the sweet potato is tender.<\/li><li>Spoon the peanut butter into a bowl and loosen it with a ladleful of hot broth, then stir the mixture back into the pot.<\/li><li>Add the spinach and simmer uncovered for 5 minutes until the stew is thick and the greens have wilted.<\/li><li>Season with lime juice, salt and pepper.
