Let the sauce reduce and taste it with rice before deciding whether it needs sugar.

🌊 Archipelago Balance

If the sauce tastes too sharp, simmer it uncovered for a little longer rather than adding much sugar; reduction will round out the vinegar.

🧄 Garlic Hoard

Leave a few garlic cloves whole so they soften into sweet, savoury morsels during cooking.

🔥 Charred Finish

For crisp edges, place the cooked chicken under a hot grill for two or three minutes before spooning over the reduced sauce.

🍚 Island Serving

Serve with plenty of steamed rice and lightly dressed greens to balance the glossy, punchy sauce.

Lore of the Hoard

Azure Archipelago sailors favour dishes that reward patience and simple provisions. This tangy chicken is said to taste best after the evening tide, when its sauce has darkened and every peppercorn has shared its warmth.

Recommended With

Garlic & Rosemary Lamb Marinade

Citrus Herb Chicken Marinade

Dragon's Gold Sauce

Garlic Pepper Mix

Green Dragon Herb Rub

Continue Your Journey

Explore another dish from the vault or visit the Workshop and Spice Merchant for a fitting companion.

Ember Coast Peanut Stew

White Lotus Lemongrass Pork

Spiced Dragon Coffee — a workshop pairing for the table

Garlic & Rosemary Lamb Marinade — explore another flavour path

Across the Azure Archipelago, this pantry-friendly chicken feast draws on the Filipino tradition of adobo.
